America’s best restaurant emerges from pandemic with $335-per-person plant-based menu

An upscale New York restaurant is ditching its well-known dishes like roast duck with lavender and honey and poached lobster in mushroom butter for an all-vegan menu when it reopens on June 10.

Like The New York Post reported, Eleven Madison Park (EMP) broke ground with a new 12-course vegan menu, which means strictly no animal products, menu.

The Post also noted that the French restaurant had made drastic changes since opening in 2006, such as revamping its dining room twice, or when servers were required to entertain customers. However, the switch to a vegan menu seems more heartfelt than a gimmick.

The restaurant now has a farm that it manages in Bennington, NY, which is about a six-hour drive from New York. The management also has a laboratory, which is said to be expensive.

“I feel most moved and inspired by dishes that focus on impeccably prepared vegetables, and I’ve naturally gravitated towards a more plant-based diet,” Daniel Humm, leader and owner of EMP, Recount CBS News. “This decision was inspired by the challenge of getting to know our ingredients better and pushing ourselves creatively.”

“We realized that not only had the world changed, but we had changed…it was becoming increasingly clear that the current food system is simply not sustainable in many ways,” Humm said.

The transition from meat to plant-based products will be a challenge as it is more expensive to obtain exotic vegetables like truffles, white asparagus and morels than meat, especially for a restaurant that uses them exclusively.

In addition to having a high production cost, EMP has a reputation to protect, as it is undoubtedly one of the best restaurants in town: the New York Times gave it four out of four stars, and it’s one of 14 restaurants in the United States to have three Michelin stars, a French rating for restaurants that dates back to the 1900s; and in 2017 he was named the Best restaurant in the world.
