Finger-licking American recipes for Sunday’s big game

  • Portion the wings, discarding the tips (you can ask your butcher to do this for you). Do not skip this step, it is important. Roll them in the baking powder. Baking powder is essential here, it makes the skin really crispy.

  • If you’re using an air fryer and cooking the full pound of wings, you’ll need to cook them in two batches. The air fryer method is best, but you can also make them in the oven.

  • Place a layer of wings in the pan of your air fryer. Do not stack them on top of each other, leave a little space between each one. Cook at 180°C for 15 minutes, then turn them over and cook for another 10 minutes.

  • If roasting in the oven, use the same temperature and cooking times. You can bake them all at once, just spread them out on a baking sheet.

  • While the wings cook, prepare your sauce. Melt the butter in a small saucepan, add the other ingredients and mix well. Taste and add more hot sauce to taste. I use Franks, but any decent hot sauce works fine.

  • When your wings have had a full 25 minutes, take them out and toss them with salt and pepper. Put them back in the fryer or oven. They can all enter together this time rather than in batches. Bake at 200°C for 6 minutes until dark, golden and crispy.

  • Toss the wings in your sauce. you can serve it with whipped feta or blue cheese sauce. Simply mix a piece of cheese with lots of thick Greek yogurt and serve on the side. These are divine. Enjoy.
