Gus’ Last Word Brings Fun American Cuisine to Wood-Ridge


A a new neighborhood bar and restaurant is now open in Wood-Ridge. Gus’s Last Word serves up creative, elevated twists on casual American fare, according to Marketing Director Dominique Marinzulich. “Inspired by their grandparents’ 1950s cellar bar, owners take their hat off to this era of home entertainment,” she adds.

The 3,500-square-foot Gus Last Word can seat around 125 guests inside; in addition to 35 others on their landscaped seasonal sandstone patio with tables covered with umbrellas and string lights. The restaurant belongs to the Skopos Hospitality Group and more precisely to the brothers Thomas (Tom) and Dean Maroulakos. The two brothers have years of experience living and working in the region.

“The space is well laid out and the local community was looking for a neighborhood bar and restaurant that focused on the hospitality that we thought we could offer,” says Dominique.

Gus’ Last Word offers comforting entrees and thin crust pizzas, with an emphasis on local and seasonal ingredients. Dinner favorites so far include Barnegat oysters, fried chicken sandwich, Irish grilled cheese, and loaded tzatziki fries. However, Tom’s favorite items are devil’s eggs and fried chicken lollipops. “They make a great snack while enjoying a cold draft beer or a cocktail at the bar,” he says. The large alcohol menu offers games on classic cocktails. For example, you will find 16 craft beers and national and international wines available by the glass or by the bottle. Current trending cocktails include Wood-Ridge Old Fashioned and Gus’ Last Word; the latter is a variation of a classic 1950s cocktail and the favorite drink of Gus, the owners’ grandfather. About the owners

Thomas and Dean Maroulakos are the founders of Skopos Hospitality Group. In addition to Gus’ Last Word, they own Franklin Social (Jersey City), Cowan’s Public (Nutley), The Vanguard (Harrison) and The Barrow House (Clifton). Thomas was previously a brewer at High Point Brewing Company, while Dean designed and managed several concepts in New York City.
