Night Moves Hospitality Welcomes New Contemporary Mexican-American Restaurant

Hospitality moves at night expands its reach to Houston with the opening of its latest restaurant, Chivos.

The restaurant joins the other unique concepts of the hotel group: Space cowboy, Trash Panda Drinks Club, and Live Oak Grill.

The restaurant is the hotel group’s fourth concept, replacing Eleven Street, where Perez previously worked as Director of Beverages. Perez has teamed up with former Calle Onze owner Chris Manriquez and former The belly of the beast executive chef, Thomas Bille.

The restaurant serves both traditional Mexican and Tex-Mex favorite; giving Houstonians a refreshing take on popular Mexican-American cuisine. Bille’s menu is packed with creative dishes such as pozole dumplings, duck served with a fig mole, and hand-made flour tortillas with truffle butter and salmon roe. Guests also have the option of enjoying handcrafted cocktails focused on Mexican spirits, with food and candy flavors that those familiar with Latin ingredients can recognize.

Authenticity extends beyond the restaurant’s image and menu – the management team all have deep roots in Mexican-American heritage. Perez has ties to Guadalajara Jalisco, Manriquez has roots from Guanajuato, and Chef Bille is a first generation Mexican-American. The cultured management team also includes general manager Celi Perez, the former executive chef of Calle Onze, who moved up front of the house, and bar manager Leesly Valdez, who previously worked under Perez in d ‘ other establishments.
